I was asked recently to add my recipe for the Chicken casserole I cooked last week, so here goes.
1) Use thighs and breast meat.
2) Brown them off in your pan in Olive oil a nice glug should do. It should take about About 5 to 10 minutes
3) Add 2 sliced onions and 2 cloves of garlic that you crushed.
4) when softened add mushrooms, diced carrots and diced butternut squash.
5) a big slug of White wine and add some dried herbs, tarragon or thyme.
6) cover it all with chicken Stock.
Simmer on the hob for about 1.5 hours

I love casserole's, they are so simple to make, but they are really filling.
